Maybe I’m just nosy, but I really enjoy seeing what others choose to eat throughout the course of a day. It’s so easy to fall into a rut when it comes to healthy eating and meal prep (at least for me). I mean, how many ways actually exist to prepare chicken and ground turkey?
Sometimes just seeing unique combinations or hearing about new products from friends or other food bloggers sparks my creativity and I’m able to come up with something slightly new and different that excites me again. And sometimes I try things I never in a million years would have come up with myself.
Case in point: these recipes have me amped up about healthy eating all over again:

So without further ado, here’s what I ate throughout the day yesterday (Tuesday), a day when I was working from home on the computer for most of the day. I generally try to eat a lot of protein + fat throughout the day because this combination does a great job of keeping me full and satisfied. Healthy carbs are important too, especially to fuel and recover from difficult workouts. Note that I am not a dietician by any means and this is simply what works for me!

2 scrambled whole eggs topped with salt + pepper + Penzey’s Northwoods Fire seasoning, 2 slices of bacon, and a few bunches of thomcord (a blend of concord and thompson) grapes on the side.
Coffee with a splash of cinnamon creamer. Because coffee.
A homemade healthy chicken enchilada (whole wheat tortilla + chicken + peppers + onions + mexican cheese + chili lime enchilada sauce) with Trader Joe’s southwestern chopped salad on the side. Plus an orange mango Spindrift – love those things! So refreshing.
A Peanut Butter Dark Chocolate + Protein Kind Bar (<– great to stash in your snack drawer at work or at home for that matter!)
A small handful of rice crackers dipped in Trader Joe’s tomato basil hummus dip. I can’t help my pre-dinner snack habit but I don’t care! 🙂
More Trader Joe’s southwestern chopped salad (SO good! <– I seriously can’t get enough of this salad. It’s perfect) topped with pan fried tilapia lightly coated with spices + whole wheat breadcrumbs + a small avocado.
Plus an herbal tea along with a chocolate-covered macadamia nut cluster courtesy of my parents’ recent trip to Hawaii, and that wraps up the day. I think I did a good job of getting in protein and produce (it doesn’t always happen that way). Hope it gives you an idea or two!
