Hi, everyone! I’m coming at you today nice and refreshed after an equally productive and relaxing weekend. Now that my husband and I are 95% settled in our new townhouse (hanging paintings + shelves included – yay!), I can finally relax without feeling like I *should* be doing 7,000 other tasks.
Summer weather has finally shown its face in southern Connecticut, and that means hot and humid weather is here to stay for the next few months. Thunderstorms are the norm in the weather forecast nearly every day this week. Let me just say that I’m extremely grateful for air conditioning, the Long Island Sound (into which I can jump when things get desperate), and cold, cold smoothies.
I, like most people, crave icy cold drinks a lot more often when the weather gets sticky. Anything cold and classic hits the spot in the hot weather, like a pitcher of cold-brew iced tea or lemonade.
Lemonade in particular conjures up quite a few fond summertime memories for me, like setting up a stand at the end of my family’s driveway to sell 25¢ cups of home-squeezed lemonade to very nice (and rather trusting, in hindsight) strangers. It reminds me of late nights on the deck, patiently waiting to catch the fleeting flicker of fireflies. So when I think of summer beverages, lemonade is at the top of my list.
You’re going to love me for this Strawberry Lemonade Greek Yogurt smoothie–yes, a strawberry lemonade smoothie! Why? Well, it’s quite a bit healthier than the typical sugar-laden cups of sweet pink lemonade typical at fairs and beach concession stands.
And the good news is that it’s just as tasty–in fact, you won’t even be able to tell it’s made with only wholesome, natural ingredients like fresh lemonade, lemon zest, frozen strawberries, coconut milk, and a touch of honey. Try it now–you won’t be sorry!
- ½ cup lemonade
- ½ cup plain unsweetened Greek yogurt
- ½ cup vanilla coconut milk
- 1 cup frozen strawberries
- ½ teaspoon lemon zest
- 1 teaspoon honey
- 3 ice cubes
- Zest the lemon. I used nearly all the zest from 1 small lemon to get ½ teaspoon.
- Add all ingredients to a blender and blend on high until smooth.
- Pour + enjoy! That's the beauty of smoothies.
-The lemon zest is optional but adds a lot of flavor. You can skip if it you're short on time and just add a splash more (1 or 2 tablespoons) of lemonade.
-I purchased Simply Lemonade brand for this recipe for reference, but you can use any kind you'd like or even make your own.
-Adjust number of ice cubes to your desired level of coldness.
