Well hello there! I’m coming at you today ready for the new week ahead. This weekend took me all over the place, but mostly to my home state of New Jersey for a belated Father’s Day celebration on Friday night and a fun potluck dinner with a few current and former coworkers on Saturday evening. Sunday involved a few hours soaking up the sun at the beach, chores, and a little meal prep.
About meal prep… Each and every Sunday, I prepare a couple of recipes for my husband and I to enjoy throughout the week. Yes, I love meal prep and couldn’t be a bigger fan! Why? Well, there is just nothing like coming home from a long day of work and a workout to food that is a) healthy, b) homemade, and c) already cooked (with an emphasis on C)! Throw a plate in the microwave or in the toaster oven and you’re good to go.
While I love developing my own recipes (check out my brand new Recipe Index to view all recipes by category!), which you see from time to time here on Petite Chef, this takes time which is sometimes lacking. When that happens, I browse my favorite food blogs from the around the web for some inspiration.
