We’re nearly halfway through October and the temperature is currently clocking in at 73 degrees. I’m not sure if this is normal where you reside, but it most certainly is not for us New Englanders. In fact, I’m fairly certain there was a blizzard on Halloween weekend this time a few years ago. But I digress.
The fact of the matter is that fall is in full swing, and I don’t think I can peel myself away from the pumpkin and slow-cooker (or instant pot, for you trendier folks) recipes any longer. We’ve at least had a few chilly mornings and evenings in southern Connecticut, and the sun is starting to dip below the horizon a little bit earlier each night. That’s enough for me to slip on a pair of fuzzy slippers (these from Ugg are my go-to) and throw a warm and comforting seasonal meal on the stove.
I’m not sure what it is about fall + winter foods, but they tend to be my very favorite both to cook and eat. We’re talking tender and savory cubes of butternut squash, hearty casseroles that are still steaming as they come out the oven, and satisfying bowls of chili or soup that warm my belly and my soul. Many people say food is the best expression of love, and I think autumn foods have something special about them that really drive that sentiment home.
I’ve been devotedly bookmarking the most delicious-sounding fall recipes left and right to get into the spirit of the season—it’s an Ultimate Fall Recipe Bucket List, if you will. I plan to make as many of these can over the next few weeks, or at least until my husband complains he never wants to lay eyes on a jar of pumpkin pie spice or a cup of chicken tortilla soup ever again. I thought it would be fun to share my list with you all today. If you have a must-make fall recipe, please leave a comment and share it with me! Happy cooking and baking, friends.
10 Swoonworthy Healthy Recipes to Make This Fall
1. Pumpkin Pie Spice Energy Balls via The Petite Chef
These little balls of pumpkin goodness taste like a cross between pumpkin pie and pecan pie, but they’re deceptively healthy: they’re made with just pecans, walnuts, dates, pumpkin pie spice, canned pumpkin, and pumpkin seeds for some crunch. The perfect seasonal snack!
2. Poblano Corn Chicken Tortilla Soup via Half Baked Harvest
I sort of feel like chicken tortilla soup can be overdone/not that exciting, but this soup looks amazing thanks to the addition of enchilada sauce, tomatillos, and poblano peppers. Yum! Looks perfect for lunch or even dinner (perhaps with a slice of toasted sourdough on the side) on a brisk day.
3. Pumpkin Mac and Cheese with Roasted Veggies via Skinny Taste
Ooh, the sauce looks so creamy and decadent I can almost taste it from here. I love that it contains pumpkin + vegetables for a healthier spin.
4. Slow Cooker Maple Dijon Chicken and Broccoli via Damn Delicious
This looks like the perfect weeknight dinner – the flavors have a quintessentially fall feel thanks to the maple syrup. Add some cauliflower rice, brown rice, or salad and you’re all set. Easy peasy and delicious.
5. Baked Spiced Hard Apple Cider Meatballs via No Spoon Necessary
I believe I’ve mentioned this recipe on the blog before, but I still have yet to make it so it remains on my bucket list! I think that needs to change ASAP, though, because what’s not to love about these sweet and savory little meatballs? I’m a sucker for meatballs and the flavors sound fantastic!
6. Healthy Caramel Apple Pie Smoothie via The Petite Chef
This one is coincidentally perfect for the warmer-than-usual weather we’re having here, lately. If that sounds like your area too, now is the perfect time to give this one a whirl. It’s sweetened naturally with dates and just a splash of apple cider and creamy (and protein-packed) thanks to the addition of collagen powder.
7. Caramelized Onion Apple Sausage Stuffed Acorn Squash via Paleo Running Momma
I don’t believe I’ve ever made stuffed acorn squash. I know. What?! I’m dying to give this recipe a go for dinner (maybe for a special date night at home?) and think that Trader Joe’s apple chicken sausage would be the perfect sub.
8. Best Healthy Chicken Casserole via Delish
Wild rice + sweet potatoes + brussels sprouts + chicken + cranberry + almonds? Sign me up! This casserole manages to include a laundry list of fall favorites and I’m all about it.
9. Pumpkin Pie Cookie Crisp via PaleOMG
This dessert looks magical yet is made with wholesome (and paleo, if you’re into that) ingredients and sweetened with coconut sugar. I think I need this for dessert this weekend.
10. Whole 30 Taco Frittata with Sweet Potato Crust via Hungry by Nature
Yum! I can’t decide what I love most about this one: the unique Mexican-themed eggs, the sweet potato crust, or how perfect this would be for meal prep (with a simple green salad on the side) or to take to a brunch. I know this is not fall-themed per-se, but I couldn’t leave it off because it looks so perfect for cooler weather.
